1 cup canned pumpkin purée (not pie filling)
½ cup brown sugar Splenda (reg. brown sugar is fine, too)
¼ cup unsweetened applesauce
½ cup Egg Beaters (or 2 large eggs)
1 tsp. vanilla
1½ cups whole wheat flour
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. pumpkin pie spice
½ tsp. salt
3 cups rolled oats
1 cup dried cranberries
½ cup slivered or sliced almonds
Directions
- Preheat oven to 350°C
- Beat together pumpkin and sugar
- Add eggs, applesauce and vanilla, beat well
- Sift together flour, baking soda, cinnamon, salt then add to mixture
- Stir in rolled oats, cranberries & almonds
- Drop rounded spoonfuls onto ungreased cookie sheet
- Bake 10 – 12 minutes
