Ingredients

  • 1 cup canned pumpkin purée (not pie filling)

  • ½ cup brown sugar Splenda (reg. brown sugar is fine, too)

  • ¼ cup unsweetened applesauce

  • ½ cup Egg Beaters (or 2 large eggs)

  • 1 tsp. vanilla

  • 1½ cups whole wheat flour

  • 1 tsp. baking soda

  • 1 tsp. cinnamon

  • 1 tsp. pumpkin pie spice

  • ½ tsp. salt

  • 3 cups rolled oats

  • 1 cup dried cranberries

  • ½ cup slivered or sliced almonds

Directions

  • Preheat oven to 350°C
  • Beat together pumpkin and sugar
  • Add eggs, applesauce and vanilla, beat well
  • Sift together flour, baking soda, cinnamon, salt then add to mixture
  • Stir in rolled oats, cranberries & almonds
  • Drop rounded spoonfuls onto ungreased cookie sheet
  • Bake 10 – 12 minutes
